Apple is one of my mother's favourite flavors, and it is her love for it that inspired me to bake apple flavored desserts. With her encouragement, I have tried multiple apple cakes and pies, but this apple crumble cake is my most successful bake so far. My first attempt, although successful, barely checked the boxes for a decent cake - it somehow lacked the charm and delicate spices I wished to taste.
I probably made a few more batches before arriving at this recipe, and it worked so well! The cake was perfectly moist, and consisted of a wonderful balance between the flavors of apple and cinnamon. The extensive cook time allows for an even bake where the heat allows the crumble to crisp up before it reaches the middle.
MAKE THIS CAKE PERFECT (FOR YOU!)
Follow these tips for the perfect apple crumble cake.
💭 My recipe calls for 2 eggs, but you can substitute this with half a cup of milk and half a cup of milk powder. (Seriously, milk powder is a blessing to mankind)
💭 For the perfect crumble, I recommend using your hands to mix the flour, sugar and butter. A whisk gets the job done but because a crumble is dry, it will blow and spray all over your counter. So wash your hands, dry them, and crumble!
💭 The apples I used for the purée weren’t the sweetest, but if you’re using Granny Smith apples, you might want to reduce the sugar level!
💭 Once you add milk to the batter, DO NOT WHISK. It will curdle a lot faster, especially if you’re in a humid place like I am!

APPLE CRUMBLE CAKE: RECIPE
Prep Time: 20 min
Cook Time: 55 min
INGREDIENTS
For the crumble
3/4 cup all-purpose flour
1/2 cup melted butter
1 tsp cinnamon
3 tbsp powdered sugar
For the cake
1.5 cups of all-purpose flour
3/4 cup powdered sugar
1/2 cup butter
1 tsp baking powder
2 eggs
1 tbsp cinnamon powder
1 cup apple puree
1/2 cup milk
RECIPE
Making the crumble
Add flour, sugar and cinnamon powder to a bowl. Stir well.
Add melted butter and whisk until a crumbly texture is formed. Refrigerate until use.
Making the cake batter
Pre-heat your oven to 170 degree Celsius.
Grease a 4-5" circular baking tray. Dust with flour. Set aside.
Add butter and sugar to a bowl. Whisk well until combined.
Add in eggs one at a time. Cream until smooth.
Add in your apple puree and milk.
Fold in until smooth.
Sift in your dry ingredients - flour, baking powder and cinnamon.
FOLD with a spatula. Do not whisk.
Add batter to the greased bowl.
Final prep and baking
Sprinkle your crumble topping and make a layer of it over your batter.
Spread evenly.
Bake at 170 C in the center rack of your oven for 55 minutes or until a toothpick inserted comes out clean.
Place your cake on the topmost rack for the last 2 minutes to achieve a golden brown crust on the crumble.
Serve hot with a cup of tea!
