5-MINUTE MUG CHOCOLATE CAKE

Moist and decadent mug cake with chocolatey goodness in every bite! Perfect for late night cravings, or whenever you fancy - and it's all made in a microwave!

I absolutely love chocolate cake, but living in a dorm has made it difficult for me to find the time and resources to bake very often. I knew that had to change! I decided to experiment one evening with the ingredients I had at home, and out popped this perfectly moist, melt-in-your-mouth chocolate cake. Admittedly, my first attempt at the cake resulted in a very close-textured cake - possibly because of the small quantity of oil. I also tried the cake with butter, which worked just as well as oil, but oil works as a perfect non-dairy alternative.


So what makes this recipe so easy and convenient? Well, for starters, the cake is eggless! A lot of people look for alternatives to egg for cakes, and I'm pleased to say that I found it for this mug cake. Adding a small quantity of milk along with the rising action of baking soda will more than suffice for a significant rise along with that airy light texture you want in cake. What's more, the addition of walnuts to the recipe adds an additional crunchy texture that contrasts the monotony of the silkiness of chocolate.


NO DAIRY?

No problem! Skip the chocolate and add plain cocoa powder to your batter, and use a plant-based milk instead of the low-fat one I used.


MAKE IT FANCY!

Decorate your cake with whipped cream, finely chopped walnuts and a dust of cocoa powder before serving.


 

5 MINUTE MUG CHOCOLATE CAKE: RECIPE


Prep Time: 5 min

Cook Time: 1-3 min


INGREDIENTS

  • 1/4 cup all-purpose flour

  • 1 tbsp low-fat cocoa powder

  • a pinch of baking soda

  • 1 tbsp granulated sugar

  • 3 tbsp cooking oil

  • 1/4 cup milk (I used 2%)

  • 1/2 cup semi-sweet chocolate chips

  • 1 tbsp chopped walnuts (optional)

  • 1 piece from a Hershey’s bar (optional)

METHOD

  1. Add flour, cocoa powder, baking soda and sugar to a bowl. Mix well.

  2. Add in your oil and milk. Mix continuously to avoid flour pockets.

  3. Add your chocolate chips and walnuts. Mix well.

  4. Transfer to your mug, and add the Hershey’s chocolate right in the center.

  5. Microwave on 100% power for approximately 1 min 30 seconds.

  6. Dig in!
