I'm a big fan of scrambled eggs cooked through until browned and caramelized. One morning, I decided to combine the fluffiness from the eggs with a pair of crunchy slices of toast! Adding some veggies to the mix provides an additional pop of flavor and color to the sandwich. Keep reading for the recipe for my new, favourite way to start my day!
ONE-PAN BREAKFAST SANDWICH: RECIPE
INGREDIENTS
2 slices of your favorite bread
Butter or oil (as much as preferred)
1/2 a small onion
1/4 cup diced green peppers
1 egg
1/2 tsp red chilli powder
1/2 tsp cumin powder
Salt and pepper to taste
1 slice of any cheese
Mint chutney for accompaniment
RECIPE
Heat oil in a large frying pan. Add your onions and green peppers, and sauté until fully browned (about 4 minutes).
In a bowl, beat your egg along with salt, chilli powder and cumin powder. Add it to the onions in the hot pan.
Stir until fully cooked with browning on the sides. Move your scrambled egg to one side of the pan.
On the empty side, add some butter/oil and place your bread slices. Toast for 2 minutes on one side.
Flip your slices and add your egg on one slice, and top off with the cheese.
Place the empty slice over your loaded slice to close your sandwich and cover for 1 minute.
Lower the heat and heat the sandwich long enough to melt the cheese.
Cut into slices and serve hot!
