MOM'S TOFU MARINADE

My favourite time of day back home was when the school bell rang, signaling the end of the day. I would run back home, and upon reaching, dispose of my bag and excitedly run to the dining table where my mom would have laid out my lunch. I specifically remember the feeling of elation rising within me when I lifted the lid off my plate to find that my mom had made this tofu marinade along with rice and curry. Ever since my mom taught me how to make it, I have always made sure to prepare it at least once in a month, even now - when I'm miles away from home.


This dish has a great deal of nostalgia associated with it, but the reason I love it so much is because of how convenient and delicious it is! All you need is a pan, some oil, tofu and any spices on have in your kitchen, and you're set. The tofu is only shallow-fried, which means you're free from the guilt of eating that deep-fried, greasy stuff. Pair this tofu with your favourite greens, and you have a side dish ready to enjoy!


I generally use firm tofu for this dish (which is ideal for pan-frying and sautéing), because it creates ~that~ gorgeous golden-brown crust as a result of the Maillard reaction instead of just crumbling or falling apart. For that reason, I would advise against using silken tofu (which is more ideal for scrambling).


MOM'S TOFU MARINADE

Prep Time: 10 min

Cook Time: 15 min


INGREDIENTS

  • 1 tsp turmeric powder

  • 1 tsp red chilli powder

  • Salt to taste

  • 1 tsp meat masala

  • 1 tsp black pepper

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • 4-5 tbsp cooking oil

  • 8-10 slices of tofu

RECIPE

  1. Mix all your spices in a bowl.

  2. Take a piece of tofu, and make small cuts on the surface using a knife. This allows the spices to permeate through the tofu and infuse it with flavor!

  3. Place the tofu into the spice mix. Coat evenly with the powder (I do this with my impeccably clean hands, but you can use a spoon!).

  4. Repeat until all the tofu is prepped.

  5. Let sit for 15 minutes.

  6. Heat 2 tbsp oil in a pan. When hot, transfer 3-4 pieces of tofu and cook on each side for 5 minutes until the spices are fragrant.

  7. Repeat until all the tofu pieces are cooked.

  8. Enjoy!
